Originating from the islands of Visayas and Mindanao in the Philippines, Dayok is a unique condiment. It is prepared using fish entrails, excluding the heart and bile sac, and fermented with salt, occasionally rice wine, and a variety of herbs. The result is a condiment with a sharp umami and salty flavor, bearing similarities to patis and bagoong.
