High phenolic olive oil

This type of olive oil is characterized by its high content of polyphenols, compounds believed to offer various health benefits. With at least 250 mg of polyphenols per kilogram of oil, it can contain over 30 different phenolic compounds, including oleacein, tyrosol, and hydroxytyrosol. The polyphenol level can fluctuate based on the oil's processing and storage methods.
